Why should tzatziki always be made with cucumber?? Let’s do it pink this time !! PIMP your beetroot!
Here is the recipe:

Ingredients
For the tzatziki:
400 gr yogurt
150 gr grated beetroot
1 small crushed garlic clove
Juice and zest of 1/2 a lemon
Mint
Salt
For the lentils:
100 gr cooked green lentils
Zest of 1/2 a lemon
Olive oil
Salt/pepper
For the topping:
Pistachios
Olive oil
Method
For the tzatziki:
In a bowl, mix the yogurt, grated beetroot, garlic, lemon juice and zest and mint.
Salt to your taste.
For the lentils:
Cook and drain the lentils.
Once the lentils have cooled down a little add some olive oil and the zest of 1/2 a lemon.
⁃ Salt and pepper to your taste.
To assemble:
Toast bread of you choice. Spread the beetroot tzatziki, top with the lentils and finish with a drizzle of olive oil and some crushed pistachios.
