Beetroot tzatziki and green lentils toast
PIMP your beetroot!

Why should tzatziki always be made with cucumber?? Let’s do it pink this time !! PIMP your beetroot!
Here is the recipe:

Ingredients

For the tzatziki:

  •  400 gr yogurt

  •  150 gr grated beetroot

  •  1 small crushed garlic clove

  •  Juice and zest of 1/2 a lemon

  •  Mint

  • Salt

For the lentils:

  •  100 gr cooked green lentils 

  •  Zest of 1/2 a lemon 

  •  Olive oil

  •  Salt/pepper

For the topping:

  •  Pistachios 

  •  Olive oil

Method

For the tzatziki:

  • In a bowl, mix the yogurt, grated beetroot, garlic, lemon juice and zest and mint.

  • Salt to your taste.

For the lentils:

  • Cook and drain the lentils.

  • Once the lentils have cooled down a little add some olive oil and the zest of 1/2 a lemon.

  •  ⁃ Salt and pepper to your taste.

To assemble:

  • Toast bread of you choice. Spread the beetroot tzatziki, top with the lentils and finish with a drizzle of olive oil and some crushed pistachios.
